I kicked it up a bit more by marinating my salmon in Grandma Sandino's Sicilian Sauce. I found it at the local farmers market and it goes with anything from chicken to fish to veggies. It made the perfect marinade for this salmon.
Ingredients
2 – 8
oz salmon fillets
½ cup
Grandma Sandinos garlic sauce1 medium zucchini, cut into cubes
1 medium yellow squash, cut into cubes
5 small red potatoes, quartered
Peach Mango Dressing (recipe below)

1/2
mango, cubed1 whole peach
2-3 Tablespoon coconut oil
2 Tablespoons honey
Directions
First,
let’s get the dressing going. Blend the ingredients in a food processor until
nice and smooth. Chill for at least two hours.
While
that is chilling, rinse the salmon and pat dry. Place in a marinating dish and
cover with the garlic sauce. Chill that right along side the dressing for 2
hours.When it’s time to to prepare dinner, heat up the outdoor grill to medium high heat. Mix the veggies and potatoes with the dressing until well coated.
