Six Sisters Stuff Cookbook Giveaway

Oriental Chicken Salad Recipe
Ever heard of the Six Sisters Stuff blog? If you have not, you are in for a treat. They are six sisters, no brothers at all, that started their own blog to share recipes with family. They have grown by leaps and bounds and have recently produced a cookbook full of recipes, crafts and other fun ideas. 
 
I had the pleasure of meeting most of them last February at the Build Your Blog Conference here in Salt Lake City. I will say, they are some of the nicest, gracious and friendly ladies around. They really put their heart and soul into this conference and I learned quite a bit about building my blog. While there, I purchased a copy of their new cookbook. It's bright, colorful and full of recipes and ideas. 
I like the fact that every recipe has a picture with it so you know how it looks when done. I'm a very visual person and I love a picture with the recipe since I, and most of us, eat with our eyes too. I made the Baked Sweet & Sour Chicken recipe in March of this year and it was a HUGE hit in my house. I thought hubby would eat the entire dish! So this time, I set out to make something lighter and chose the Oriental Chicken Salad.
It's a very simple recipe to make and it yields delicious results. First, let me talk about the dressing. I advise making a double batch. Trust me, it's that good. You'll thank me later.

Here is the recipe direct from their blog:

Dressing

6 Tbsp. honey
3 Tbsp. Rice Vinegar
1/2 c. Mayonnaise
2 tsp. Dijon mustard
1/4 tsp. Sesame oil


Blend together all ingredients in a small bowl with a whisk or mixer. Refrigerate while you work on the salad.

Salad:
2 pieces of Crispy Chicken Strips (frozen or from the deli) or leftover grilled chicken (I used Foster Farms honey grilled chicken)
Bagged salad with assorted lettuces, cabbage, and vegetables
Bagged broccoli slaw (I used Asian Salad mix with Cabbage)
1 Tbsp. sliced almonds, toasted (see picture below)
1/4 c. fried won ton strips (optional- I did not use these.)
1/4 cup mandarin slices, drained well (I actually tripled this amount - we love mandarin oranges)

Directions:
Bake the chicken strips according to the package directions (if you bought frozen ones) or reheat grilled chicken. Cut up the chicken into bite-sized pieces.


Mix together a large handful of the lettuce salad and the broccoli slaw (or Asian slaw). Top with cut up chicken, almonds, won tons and mandarin slices. Drizzle the dressing on top. Serve immediately.

This was wonderful. Light, full of flavor and texture and made a wonderful meal that was accompanied by garlic bread, a staple in our house. Hubby loved it as well and I thought he'd lick the plate to get all the dressing up. He loved it that much.

  8. My favorite salad is a recipe I got from my sister in law, it is a spinach salad with ho-made vinaigrette, so yummy!

  10. Our favorite summer salad is the pea salad. So easy just peas cheese and some mayo-we add a little blue cheese dressing and some blue cheese crumbles. We also add bacon pieces if we have them. It is always a crowd pleaser.

  11. Zesty Chicken Taco Rice Salad. It's a recipe I got from a Minute Rice Cookbook many years ago and although I don't use Minute Rice very often anymore, I still love this recipe!
