Summer, summer, summer.... I love this time of year when the weather is warm (although temps in the 100's are not my favorite) and we are outside all the time. Living in Utah, we celebrate the snow melting and the days getting longer. I love being outside!!
I also love to cook as you all know but on some of those hot days, the oven needs a vacation so with a plethora of fresh fruits and veggies, a mango salad was in order.
Here is the group of fresh ingredients; tomato, mango, red pepper and avocado.In addition, three varieties of goat cheese and some fresh cut kiwi.
Just add shrimp and you have a fresh delicious salad!!
To cook the shrimp, take a cup of canned crushed pineapple, add a clove of chopped garlic, a pinch of crushed red pepper and toss it into a deep skillet. Add a pound of large shrimp and cook until the shrimp is pink.
I also made a homemade peach mango dressing. Take a half mango (peeled and chopped), a whole peach, 2-3 Tablespoons coconut oil and 2 Tablespoons honey and blend it in a food processor. Chill at least an hour before serving. It's a nice thick light and refreshing dressing for your salad.
To assemble, just toss your lettuce, fruit and veggies in a bowl and top with the shrimp and goat cheese of choice. Drizzle the dressing on top and you're done!
Sorry I have no pictures of the mango peach dressing.... I ate it before I could photograph it! But look at all the gorgeous colors of this fresh salad!! It's a feast for the eyes as well as the taste buds.
