Easy Summer Grilling: Peanut Noodles and Chicken Skewers
Is there anything better than summer grilling? Sure, hearty winter casseroles and stews are comforting when it’s snowy and cold outside, but it’s hard to beat biting into a freshly grilled burger or hot dog while you’re outside soaking up the sunshine.
Delicious food isn’t the only benefit you get when you fire up the grill, though. If you’re pressed for time or looking for dinner ideas that won’t put too much strain on your wallet, grill food is an easy time and money-saving option. Unlike slow-roasting or baking, grilling meat and veggies typically only requires a couple minute son each side, meaning it’s simple to get dinner on the table fast.
Plus, grilling recipes tend not to be overly complex; just use whatever protein and veggies you have on hand and create a tasty marinade with pantry basics like ketchup, balsamic, or olive oil and lots of spices. You don’t need dozens of complicated or pricey ingredients to make grilled foods taste amazing; in fact, when it comes to grilling, basic recipes tend to be the most popular.
Another great thing about grilling is that there are so many types of recipes to choose from. Classics like burgers and dogs are always crowd pleasers but don’t be afraid to branch out and get a little more creative this summer. Peanut Noodles and Chicken Skewers
Total Time: 30 min
- PAM® Grilling Spray
- 8 ounces dry linguine pasta, uncooked
- 1 cup Peter Pan® Crunchy Peanut Butter
- 1/2 cup hot water
- 1/4 cup La Choy® Soy Sauce
- 2 tablespoons grated fresh ginger
- 1-1/4 pounds boneless skinless chicken breasts, cut into 1-1/2-inch pieces
- 4 tablespoons toasted sesame oil, divided
- 1 can (28 oz each) La Choy® Stir Fry Vegetables, drained (feel free to substitute your own chopped fresh or frozen celery, water chestnuts, carrots and baby corn—canned is just easier and saves some time!)
Spray the grate of your outdoor grill with grilling spray. Preheat to medium-high heat. Cook pasta according to package directions until al dente.
While the pasta is cooking, whisk together peanut butter, water, soy sauce and ginger in a medium bowl until smooth. Divide your peanut sauce into 2 bowls.
Thread chicken pieces onto skewers and brush liberally with peanut sauce from one of the bowls.
Grill chicken for 7 minutes, then turn it over and grill it for 7 more minutes, or until juice run clear.
As the chicken is cooking, heat 2 tablespoons oil in a 12-inch skillet over medium-high heat. Add stir fry vegetables; cook and stir for 5 minutes or until softened.
Drain pasta, then add to skillet and drizzle with the remaining 2 tablespoons of oil. Toss pasta and veggies to combine. Add the peanut sauce from the second bowl and toss together. Serve noodles with chicken skewers. If you prefer your peanut noodles cold, simply make them the night or a couple hours ahead of time and keep chilled in the fridge!
