Garlic Grilled Salmon w/Peach Mango Veggies

Easy Salmon Recipe
Grilled Garlic Salmon with Peach Mango Veggies…. sounds so delicious!!!  With the bounty of fresh summer fruit such as peaches and mangoes, these fruits can spiff up any outdoor cooking experience. I've been cooking a lot with mango this summer and my grilling has taken on a whole new adventure. 
Easy Salmon Recipe
I kicked it up a bit more by marinating my salmon in Grandma Sandino's Sicilian Sauce. I found it at the local farmers market and it goes with anything from chicken to fish to veggies. It made the perfect marinade for this salmon.  

Ingredients
2 – 8 oz salmon fillets
½ cup Grandma Sandinos garlic sauce
1 medium zucchini, cut into cubes
1 medium yellow squash, cut into cubes
5 small red potatoes, quartered
Peach Mango Dressing (recipe below)

Peach Mango Dressing
1/2 mango, cubed
1 whole peach
2-3 Tablespoon coconut oil
2 Tablespoons honey

Directions
First, let’s get the dressing going. Blend the ingredients in a food processor until nice and smooth. Chill for at least two hours.

While that is chilling, rinse the salmon and pat dry. Place in a marinating dish and cover with the garlic sauce. Chill that right along side the dressing for 2 hours.

When it’s time to to prepare dinner, heat up the outdoor grill to medium high heat.  Mix the veggies and potatoes with the dressing until well coated.

You can also cook this on the stove top, but I much prefer cooking outdoors when it’s so hot. Using a flat griddle, place the salmon on one side and the veggies on the other. 

Cook until salmon is done, flipping the fish once or twice but moving the veggies around a bit more often.
