This is a nice light dinner idea that blends the sweet tangy preserves with the spice of the sirracha for a explosion of flavor. There are only 4 ingredients so it's super easy and does not require any specific fancy kitchen tools. Perfect for those busy weeknights.
Ingredients
3 Tablespoons Apricot Pineapple Preserves
1 Tablespoon Sirracha sauce (or more if you like it extra spicy)
1 large clove of garlic, chopped
2-8 oz salmon steaks or fillets

Preheat the oven to 350 degrees
Mix the first three ingredients in a small bowl.
Using a brush, spread 1/2 the mix on one salmon fillet and the other half on top of the other.
Place salmon fillets in a baking dish and cover, baking for 15-20 minutes.
Serve with a salad or other fresh veggie for a light dinner.
I added some fresh steamed broccoli, a small salad and some roasted garlic bread for a well rounded and satisfying dinner. This baked salmon was a hit at my house. I do have to give some credit to my friend SheRie who came up with the idea of blending a sweet preserve with the spicy sirracha.
